Sweet Potato Casserole

4 large sweet potatoes
3 eggs
1 cup sugar
1 tsp Ay! Chihuahua Chipotle Pecan Seasoning
1/4 tsp. vanilla
1 stick butter
1/3 cup brown sugar
1/2 cup chopped pecans

Bake sweet potatoes. Once the poatoes are cooked then peel and cream with beaten eggs until smooth. Add suger, Chipotle Pecan Seasoning and vanilla to the poatoes and mix. Pour the mixture into a baking dish. (9x13x2) Bake for 30 minutes at 300 degrees. Melt butter and pour over the potato mixture, then sprinkle the brown sugar over the mixture followed by the pecans. Bake for an additional 20 minutes.
